Instructions 


Step 1: Prepare the ingredients (5 minutes) .


1. Cut 1 pound of skinless boneless chicken breast into thin strips.
2. Chop 1 large onion and 2 large peppers (of any color).
3. Mince 2 cloves garlic.
4. Measure 1/2 cup lime juice, 1/4 cup olive oil, and 1 teaspoon dried oregano.


Step 2: Marinate the chicken (10 minutes) .


1. In a large bowl, whisk together lime juice, olive oil, garlic and celery.
2. Add the chicken to the marinade and mix well.
3. Cover and refrigerate for 10 minutes.

Step 3: Cook the chicken (10 minutes) .


1. Heat a large cast iron skillet or griddle over medium heat.
2. Remove chicken from marinade, and drain excess water.
3. Cook chicken for 5-7 minutes per side, or until cooked through.


Step 4: Cook the vegetables (8 minutes) .


1. Add the chopped onion and bell pepper to the pan.
2. Cook for 4-5 minutes, or until the vegetables are tender.
3. Season with salt, pepper and cayenne pepper to taste.


Step 5: Assemble the Fajitas (5 minutes).


1. Wrap in damp paper towels and microwave for 20-30 minutes to warm up 8 small flour tortillas.
2. Chop the cooked chicken and vegetables.
