Kandil Simidi has its roots in Ottoman cuisine, dating back to the 15th century. The name "kandil" refers to the Turkish word for "candle," a symbol of light during the holy night of Ramadan and other Muslim holidays. Simidi means "bread" and was often baked in a wood-oven and shared with neighbors and family.

Mahleb 1/4 Teaspoon

1. Combine warm milk, yeast and sugar. Let it sit for 5-7 minutes.

2. Mix flour, salt, mahleba and cardamom.

3. Add melted butter, beaten egg and yeast mixture. Mix until you have a smooth dough.

4. Mix for 10 minutes.

5. Let the dough rise for 1 hour.

6. Divide into 8-10 pieces. Roll each one into a loop, then into a circle.

7. Place on a baking sheet, leaving space between each.

8. Bake at 375°F (190°C) for 20-25 minutes or until golden brown.

9. Dust with candy sugar.
